A great dip for spinach, pita chips, warm pita, or crackers.

1 tbsp minced garlic
¼ cup chopped shallots
4 green onions, chopped
8 oz. spinach leaves
½ tsp salt
½ tsp lemon zest
2 tsp fresh lemon juice
1 cup plain Greek yogurt
½ cup crumbled feta cheese
2 tbsp chopped dill
black pepper to taste

Cook garlic, shallots, and green onions in a bit of oil over hi heat until fragrant. Add spinach and cook until wilted. Put mixture into food processor or blender and pulse until roughly pureed. Add remaining ingredients and pulse until integrated. Serve warm or chilled.
