1/3 cup grated Parmesan cheese

3 tablespoons extra virgin olive oil

2 tablespoons white wine vinegar*

1/2 teaspoon finely chopped garlic

1/2 teaspoon Dijon mustard

Whisk together or shake in a jar.

Covers 8 cups mixed salad greens.

*Vinegar keeps “forever” so don’t hesitate to keep several flavors in your cupboard.
